6 Summer Cocktails


We’re now well into the summer and you’ve probably been hit pretty hard by the sweltering heat or the sudden thunderstorms. So why not freshen up by trying six of the best cocktails in Sydney? They may not lower the temperature or stop the rain from coming in, but at least they’ll make this year’s wet, hot summer taste a little bit better.


Ladies Who Lunch

As the title suggests, this cocktail is for all the ladies out there. With a mix of Ketel One vodka, elderflower, fresh lemon, pomegranate, lychees, mint, and soda, this is a cocktail that redefines the word refreshing.

Jamaican Julep

With summer coming in hard and fast and cocktails inspired by the many regions of Cuba, you can’t beat the Lobo Plantation’s Jamaican Julep. Consisting of Appletons VX, lychees, black tea syrup, passionfruit, mint, and ginger beer, this cocktail tastes even better than it looks.

Elderflower Lychee Martini

The first thing to do when you walk into The Botanist is order the Elderflower Lychee Martini cocktail. Made with St Germain Elderflower Liquer, Vodka, muddled lychees and a dash of lime, this cocktail is sure to quench your thirst and go down a treat on any hot summers day. 

Piña Colada

There’s a reason why the New Orleans-inspired Earl’s Juke Joint is one of Sydney’s best bars: it’s got arguably the best Piña Colada this side of Puerto Rico. Comprised of equal parts condensed milk and coconut cream, lime and pineapple juice with a whole bunch of blended rum, this is the Piña Colada that tops all Piña Coladas.

Merivale’s underground prohibition den combines the allure of the 1920’s with some of the best cocktails in town. The summer highlight would have to be the Joe Redding Julep. This cocktail is a brilliant concoction of Nieport LBV, Havana Club 7yo Cuban rum, Hennessy VS Cognac, mint, and preserved berries.

Trinidad Sour

No cocktail list would be complete without an entry from Sydney’s Baxter Inn. Whilst you could order anything and be satisfied regardless, our Baxter Inn pick for this summer would have to be the Trinidad Sour, a unique mix of bitters, orgeat, lemon juice, and rye whiskey.
